No bake Twix cheesecake

If you’re under budget for the month and want to treat yourself to something rich, sweet, and unhealthy, then try out this no bake Twix cheesecake. This recipe is great for nights where you’ve got your friends round – it looks impressive, it’s tasty, and most importantly, can be done with minimal cooking skills.

Shopping list (with prices)

We’ve included prices in our shopping list, so that you know just how much making this recipe will cost. If we’ve listed something you’ve already got in your cupboard or fridge, then don’t go out and buy more; using what you’ve already got is key to saving money.

The entire shopping list will cost you £18.03. Of course, you don’t have to use the branded versions. Supermarket knock offs taste the same, and your guests won’t be able to tell the difference. For example, if you swap Philadelphia cheese for Creamfields, then you bring the total down to £19.08. Switching Cadbury’s chocolate to Tesco’s Ms Molly’s will save you around £2.

Another thing to note: the recipe doesn’t call for a whole tub of butter or icing sugar, so you can keep these in the cupboard for next time you make a dessert.

For example, you could use some of the remaining butter to make our refined sugar alternative flapjacks or some sugar-free brioche. You could also make some simple biscuits, whisk butter and icing sugar together to make buttercream, or make a victoria sponge.


Ingredients 

  • 1 pack of Shorties biscuits
  • 50g of butter (melted)
  • 3 x 280g tubs of soft cheese
  • 300ml double cream
  • Caramel drizzle
  • 3 tablespoons of icing sugar
  • 2 teaspoons of vanilla essence
  • 1 chocolate bar
  • 2 Twix bars (for decoration)

How to make our no bake Twix Cheesecake

Step 1

Crush the biscuits. If you have a food processor, then use that. If not, my method is to put the biscuits in a sandwich bag and lightly bash them with a rolling pin, taking care not to damage the worktop.

Step 2

Place the crushed biscuits in a mixing bowl, add the melted butter and mix until all the biscuits are coated.

Step 3 

Normally, I use a spring baking tin but this time, I didn’t use the base. I placed the top part of the tin straight onto the serving plate, added the biscuits crumbs, and pressed them down.

Step 4 

Melt the chocolate. We do this mid-day as the chocolate will then have enough time to cool before it gets added to the cheese mixture.

Step 5

In a big bowl add the cream cheese, double cream, icing sugar, and vanilla essence and whisk until thick.

Step 6

Move a third of the mixture to another bowl. With the remaining mixture, add some of the caramel mix. Lick the spoon: if you can taste the caramel then you have added enough, if not, add some more until you get your desired flavour. 

Step 7

Spoon the mix on top of the biscuit base and spread it across evenly.

Step 8

With the separated third, add some of the melted chocolate, making sure to leave some to drizzle over the top.

Step 9

Dollop the chocolate mix on top of the mix in the tin and spread gently over the other mix.

Step 10

Drizzle the remaining chocolate on top and then place in the fridge. You can make this no bake Twix cheesecake the day before, or earlier in the day, and it will be ready by dinner time.

Step 11

When you’re ready to take the cheesecake out of the fridge, remove the outside spring tin, and then drizzle the cheesecake with some caramel. 

And finally, it’s Twix time. Cut your Twix bars into pieces (I divided each finger into four), and do some artistic decor. A while ago, we got a Too Good To Go bag from Cocoba Chocolate Shop, and to prevent wasting the toffee caramel pieces we received, we scattered some across the top.

Service!

The finished product looked good in the middle of the dinner table. Most importantly, our no bake Twix cheesecake tasted amazing and our friends took no time at all to devour the lot.
